Italy - VenetoFollowing the demise of Domotechnica in around 2004, it was assumed that shows in Berlin and Cologne would pick up the reigns, but Milan seems to be the place for built-in appliance manufacturers to sign new deals and most importantly, exhibit many appliances as concepts. FTK (Future Technology for the Kitchen) has become an integral part of I Salone and Eurocucina and, this year we saw some pretty amazing ideas.

Irinox Home Collection  presented what the company sees as the household appliances of the future: Freddy, a blast chiller, and Zero, a vacuum chamber, described as “appliances to free you from the chores of the future”

With Freddy and Zero you’re apparently free to cook when you want, organizing your time in the best way, free to be together with your family and friends when preparing meals for them, and free to enjoy your time in the kitchen with two new allies that ensure quality and perfect storage for your produce.

  • -35°C to +80°C, help you enjoy your time in the kitchen
  • Blast chilling of warm food to +3°C to keep it perfectly in the fridge for a week
  • Shock freezing for storing home deep frozen fresh meat and fish, seasonal vegetables and much more in the freezer
  • Rapid thawing of food, completely safe and without losing moisture, vitamins or quality
  • Natural proofing of home-baked bread, pizza and flat bread that enhances their fragrance and makes them easier to digest
  • Low temperature cooking for intensely flavoured, tender meat or fish
  • Programmed re-generation to provide a hot dish ready for the family when they arrive home
  • Customised storage to set a precise holding temperature for delicate food such as ice cream, chocolate or raw fish
  • Beverage chilling so you can offer your guests wine and drinks at the ideal temperature.

Freddy, designed by Decoma Design, features uncluttered lines and an intuitive, easy to use control panel. Made in AISI 304 stainless steel, it will adapt to any kind of kitchen. A 60×60 cm built-in version is also available.

Then there’s ZERO, “the only built-in vacuum chamber that can achieve a 99.9% vacuum” – another ally that will extend the life of fresh food and maintain aromas, flavours and colours longer.

ZERO_lrWith Zero you can keep any raw or cooked product, even the most delicate, chilled and vacuum packed in the fridge for up to two weeks, and vacuum sealed, deep frozen products can be stored without problems for 8-10 months in the freezer. Zero also provides a maximum vacuum cycle that can be used to prepare food for vacuum cooking at low temperature, and a more gentle vacuum cycle suitable for special containers. Zero vacuum packs solid and liquid food, including wine, using classical vacuum bags, special steel containers with lids, glass preserve jars, and all bottles with a special cap suitable for vacuum packs.

It would be fair enough to say that many kitchens just won’t be large enough to include these additional appliances which, to be fair, perform tasks which aren’t always needed but if you have the space and budget available they might just be worth considering.
