Sous-vide is a French term translating to ‘under vacuum’, a technique developed in France in the mid-1970s. It refers to the process of vacuum sealing food and cooking it in a water bath. The technique involves cooking food for longer periods of time at a lower temperature, usually between 40 and 100°C. Unlike boiling food in a bag, where the water is brought to temperature before the food is added, sous-vide cooks food gently, at a temperature that matches the food’s ideal internal temperature. This method allows the cook to bring the ingredients to a precisely controlled temperature, without overcooking.
The Asko sous-vide drawer features a 4 m³/h pump capacity and push-to-open mechanism. It offers a choice of three vacuum levels and three plastic bag sealing levels along with a hose for external vacuuming. At 14cm high, it is suitable for integration with Asko’s range of ovens and homeowners will love the easy-to-clean, stainless steel interior.
